Quick and easy snacks to make for a road trip

Some of my favourite childhood memories involve long road trips with my parents, their friends and their children (whom I called my ‘fake cousins’). We’d drive up to Ashulia, or maybe head off to Modhupur, find a nice green area, pitch a blanket, and spend the day running around, exploring, singing, napping under the open sky, and just enjoying each other’s company. The best part of those trips was definitely the food. Our moms got creative with quick and easy snacks, which somehow tasted even more delicious because of the associations with road trips. 

This month, I’m sharing some of my favourite road-trip snacks, with Turtleboo’s Lazy Chef twist.

Carb overload

This is your traditional alu bhaji paratha with a  cheesy surprise 


  • 4-5 medium-sized potatoes, shredded
  • 4-5 medium-sized shallots, thinly sliced
  • 1 tsp whole cumin  
  • 2 whole green chilies 
  • Salt to taste 
  • ½ tsp sugar
  • ½ tsp turmeric 
  • A pinch of red chilli powder
  • ½ cup unsalted deshi cheese or mozzarella, shredded


Alu bhaji: Add oil to a pan heat and add everything except the cheese. 

Cover and cook the alu bhaji slowly until everything is cooked, and the potatoes are softened. 


Lay the cooked paratha down. Spread the alu bhaji on it and sprinkle a fistful of cheese on top and roll. For best results, make sure that both the alu bhaji and the paratha are hot, so that the cheese eventually melts inside. 

Roll up the paratha tightly and cut into two pieces and pin them with toothpicks to keep everything in place.

This recipe is to die for, not just for road trips, but my secret go to food in the middle of the night. 

All you need is bhaat (cooked rice), and whatever is  left over in your fridge from last night (except fish) 


  • Cold cooked rice 
  • Leftover vegetables/ beef / chicken 
  • Chopped shallots, as many as desired 
  • Green chilies to taste
  • A bunch of coriander leaves  
  • Pinch of turmeric 
  • Salt to taste 
  • 2 eggs (scrambled)
  • Butter or ghee


In a little bit of ghee or oil add the cold rice

And add all of your mixed vegetables leftovers, along with cooked leftover chicken or beef (for best result, shred the chicken or beef before adding) 

Add the rest of the ingredients and stir until the onions and green chilies are cooked through.

Roast beef sandwich

If you’re particularly short of time, or just lazy like me, you can never go wrong with a good roast beef sandwich


  • Regular brown bread or white (toasted)
  • Store bought roast beef slices
  • Butter for the bread
  • Sliced cucumbers or avocados

Process : 

Butter up the bread slices. 

Slap on the beef and avocados 

And close the sandwich with bread. 

Gently press the breads together to bring everything together. 

Easy peasy lemon squeezy!

Enjoy your road trip. 

Tip : Avoid boiled eggs because no one likes to travel with a gassy friend.
